A Poetic Aging
Part of Almivisi’s mission consists with managing vineyard with respect towards the plants’ life, their land and the natural environment. Almivisi wines mature in different 500-liter barrels made of precious oak. The toasting and the ageing levels vary accordingly to aromatic notes chosen to match our wine’s natural chemistry.
During the ageing period, between the end of fermentation and the bottling, flavors change in harmonic evolution of wine components. It’s when wine receives color and body, while it is affected by manifold, intense and fragrant aromas like vanilla, coffee and spices: these are such intense features that only best woods confer to wine. At bottling, flavors meet harmoniously and compose in their balance after approximately six months. That’s the stage of perfection for our wines: it is the final landing we at Almivisi aim at and the threshold we requite to approach to markets.
