Our vineyards are located at the border between the regions of Veneto and Friuli. This area is characterized by flat land of allu- vial origin with stratifications of carbonate. The climate has hot but breezy summers thanks to the proximity to the Adriatic Sea.

HARVEST

The grape harvest takes places in two stages. The first harvested quantity gives f reshness and f ruity scents, while the second quantity, which is left maturing for a longer time, gives structure and smooth- ness. The harvest is strictly done by hand and the best bunches are selected.

VINIFICATION

The fresh grapes are pressed softly after few hours from the harvest. The must is settled cold and naturally. The clear part is put into French wood barrels, where the alcoholic fermentation and the following six-months long ageing take place. In this period weekly batonnages take place and the use of sulph- ites is minimized. In spring the wine is made clear and bottled, adding selected sugars and yeasts to allow the second fermenta- tion. The wine is left to rest for three years, during which it develops, ripens and gets sparkling. After that it is disgorged and the liqueur d’expedition is added.

ORGANOLEPTIC FEATURES

Golden yellow, bright. This sparkling wine is vigorous, balanced in its acid and alcoholic components, with a bouquet of ripe fruits, toasted almonds and apricots. Immediate scents of bread and dry pastry.
The taste is superb, the mouthfeel is complex and full body.

ENOGASTRONOMIC MATCHINGS

Perfect with oysters, raw and cooked seafood and with grilled fish. Excellent to accompany appetizers with friends.
